Has anyone seen anything about coin hoards or even coins in general that can be linked to the Japanese invasions of Korea under Hideyoshi?

I suggest you send a PM to bgriff99 and Verify-12. The former has deep knowledge of cash coins, including those cast outside China, the latter is a specialist of modern Korean coins. However, I suspect he would know about coin finds.

I know nothing about metal detectoring in Korea, but personally, I wouldn't want to dig there or look for metallic objects even it were allowed. :-X
