Here you see a $5 banknote of 1959.

It was issued by the British Caribbean Territories (Eastern Group).

The information on Wikipedia implies that no coins were minted for the islands between 1966 and 1980.

How did the islanders manage? Did any of our members visit any of the islands during that period?

To the best of my knowledge and it has been awhile, the 1965-dated Eastern Caribbean coins were minted with a stagnant date as needed until 1981.  The 1965 proof set of the Eastern Caribbean coins was supposedly minted and sold prior to 1981.  They were offered for sale in British Royal Mint catalogs from the North American Bureau for many years when I bought them in the USA.

If other members have better information, please share, if you would, please.

A stagnant date, otherwise known as a frozen date. That would make sense.

I too bought a proof set of coins dated 1965, directly from the Royal Mint in 1980, which advertised them as restrikes.
