Would not necessarily have to be Pobjoy. As you wrote, several "euro mints" have made Irish collector coins in the past: KNM, Mint of Finland, Monnaie de Paris, Münze Österreich ... plus a few mints outside the euro area.

This year's Italian contribution to the series shows the Galleria Vittorio Emanuele II in Milan. The theme is "Cast Iron Architecture".

Here's the Maltese €10 silver collector coin depicting Argotti Botanical Gardens Conservatory. The gold €50 collector coin has the same design as silver coin.

Here's the Irish issue for this year's 'Europe Star Series' program, depicting Ha'penny Bridge. Struck by BH Mayer Mint in Germany with issue price of €60. Mintage: 4000.
