It is really hard to find a symbol for this country that is not a map, religious or heraldry. The Moldavian coat-of-arms, carved on the walls of Cetăţuia Monastery in Iaşi is not a bad choice, but even at this size and after some artful editing, it is detailed and busy.

My proposal is to retain only the bull's head with the star between the horns, like on this stamp (delete the postal horn) plus country name above and date below. If that's to stiff for you, add the bull's neck (but not the rest) as on the coat of arms of Moldavia in 1481, carved on the walls of the Putna Monastery (picture available here)
