Congrats! Could you please explain what do codes like DD113 mean? :)

And about the country count, I think you can easily go up to 150, after that it becomes slightly difficult. My count is still somewhere near 220...Haven't added a single new country (coin that is!) except Vatican.

Nice collection with good prospects. As you make more progress, it will be increasingly difficult to define "country". At some point, you will encounter coins of non-existent countries. Look at these for examples. Maybe the discussion here will be of help. You already have two coins of countries that no longer exist (Czechoslovakia and Yugoslavia.) As you go back in time, it will also become more difficult to define "country" also.

I have approximately 192 countries but I have a loose definition of a country.  For instance I will count India and British India as 2 countries and Belgium and the Belgium Congo as 2 countries.  I also will count a state as one country such as Gwalior.  I would count Italy and a Roman coin as different and Franch and the French Colonies as seperate.
Here is my Breakdown of coins by the first letter of the country's name:

For instance "A"   "12" means I have 12 countries starting with "A" (not 12 coins).

Likewise with UK. I have British coins and Scottish coins plus a good collection of Welsh banknotes.

Then there are the islands - Man, Lundy, Guernsey, Jersey, Sark, Alderney, Herm, [I have a Herm tourist note collection.] to name a few. Then there are also tokens from Scottish islands and IOW.

Gerard at least has pipped me to the post... I have 246 separate 'countries'. As others have said, it depends how you define 'country'. Personally I class a separate official coin-issuing entity as a separate 'country', so Jersey, Guernsey and Herm (yes, I have that tourist note as well) are genuine 'countries', as are the pre-1867 Canadian provinces.

However, I get a bit more lax when it comes to older issuers. I have combined all the pre-1871 German states into one file, for example, so they show up as one 'country' called German States. Likewise for Italian, Dutch and Austrian states. If I counted each German etc. state for which I had at least one coin separately, the total would probably go over 300. And I have a couple of French regional issues that I've just stuck at the start of France pending a decision on what to do with them (starting with attributing them correctly).

I also don't count Northern Ireland or Scotland as separate, since the banknotes they issue are valid across the UK, which the Channel Islands etc. ones aren't. Also because I'm primarily a coin rather than note collector, there's no reason to separate them for coin purposes. Scotland before 1707, for which I have all of 5 coins, is separate, though.

As to the Ceylon/Sri Lanka question, my policy is that if there's a clear line of succession from one kind of state to another covering substantially the same geographical area, then I count it as one. So Ceylon and Sri Lanka are the same for me, just as pre- and post-1947 India are the same. Tsarist Russia, the USSR and post-Soviet Russia are the same country for me, but various bits of the Tsarist and Soviet empires that have regained independence are separate for their independent issues. If a small part of a large country becomes independent (as with the Soviet republics and East Timor), I just start a new file for the independent bit. Indonesia before and after the independence of East Timor is substantially the same country, numismatically. On the other hand, when Czechoslovakia split up I created two new files for the successor states.

When countries combine I have to make a judgement of whether to start a new file for the combined country or have a continuum for one predecessor and a separate file for the other(s). For the UK this was easy, as I had pre-1707 English coins before I had similar Scottish ones, so the continuum goes from my earliest English coin (a Northumbrian coin from the 8th century) to modern UK issues, with a separate file for pre-1707 Scotland. My Germany file covers united Germany from 1871 on, with the DDR as a separate file.

I don't have detailed record of coins I have like Gerard ;) although I do maintain an excel file which I update regularly. (as and when new coins are received or sent to someone). The excel file has all the important details of all the coins (denomination, composition, KM#, weight, diameter, date, edge type, mint marks if any, mintage wherever available, shape, description of obverse and reverse etc)..I have recently added a column for 'continent' too but not yet fully updated. ::) I also intend to include another column for designer(s), but considering the size of excel file, it seems very difficult to update that column. So according to the excel file I have maintained, I can say that my collection has highest number of coins from US (thanks to state quarters and presidential dollars which I collect by mint mark), followed by Russia, Belgium, France, Germany and so on. (Euro coins excluded) I have excluded India here as I don't collect Indian coins anymore. Europe must dominate over other continents, and (I guess) Africa is least represented in my collection which is not at all a good sign :(, considering the variety of coins from Africa.

Several places you mention in the discussion (e.g. Lundy, Vatican) are not countries according to international law (see the link I gave before*). At the same time, one of the largest legitimate coin-issuing entities, Euroland, is not a country either. Back when I still cared about having coins from all countries, I took the Yeoman catalogue as a guide. If it had a separate section (not a sub-section), it would be good enough for me. If I'd have to start again, I wouldn't count anything before 1815 as a country and I'd take the list of UN members as a starting point.
