A tree. ;D  Apparently a baobab (embondeiro), but neither the mint (incm.pt) nor the government bulletin provide much info about the details of the design: A moeda «Exploradores Europeus» apresenta no anverso os ramos de uma árvore africana, o embondeiro, acompanhados de outros símbolos etnográficos daquele continente, o escudo nacional, o valor facial, a era e a legenda «Portugal»; no reverso apresentam-se os retratos dos dois exploradores e parte de um embondeiro que complementa o anverso da moeda, na orla superior direita consta a legenda «Exploradores europeus», do lado esquerdo encontra-se o logótipo da série «Europa» e na orla inferior inscrevem-se os apelidos «Capelo e Ivens».

The obverse shows the branches of an African tree, the baobab (accompanied by other symbols ethnographic symbols of that continent), the national emblem, the face value, and the caption "Portugal ". The reverse shows the portraits the two explorers and part of a baobab that complements the obverse of the coin. In the upper right edge is the caption "European explorers"; on the left is the logo of the series 'Europe', and the lower edge is inscribed with the names "Capelo and Ivens'.

The designer, Baiba Šime, is from Latvia, by the way, but AFAIK lives in Portugal now. She also designed this year's Sagres coin. Link only as that piece would be OT here. ;)
